Amber Roy is Clinical Faculty in the Department of Health and Exercise Science. She holds a Bachelor of Science in Dietetics (2014) and a Master of Science in Food Science and Technology (2016) from Iowa State University. Amber is a Registered Dietitian Nutritionist (RDN), having completed her dietetic internship at the Minneapolis VA Health Care System (2018).

Amber’s research background is in extension-based education, with focuses on leafy-greens food safety, older adult nutrition and food safety, and culturally-tailored diabetes education. She is trained in Hazard Analysis and Critical Control Point (HAACP) and (FSPCA) Food Safety Preventive Controls for Human Food. She is a member of the Academy of Nutrition and Dietetics (AND), the Nutrition Educators of Health Professionals (NEHP) dietetic practice group, and the Minnesota Academy of Nutrition and Dietetics (MAND).

At the University of St Thomas, Amber designs and teaches nutrition courses and coordinates departmental internships in health promotion and exercise science. She strives for excellence in teaching by exploring active, learner-centered, and inclusive strategies
